Black cherry and chocolate crumble

Ingredients
For the crumble topping
  • 75g/2¾oz plain flour
  • 50g/1¾oz butter
  • 6 amaretti biscuits
  • 55g/2oz dark chocolate
For the filling
  • 150g/5½oz tinned black cherries
  • 3 tbsp brandy
  • 2 scoops ready-made vanilla ice cream, to serve
Preparation method
  • Preheat the oven to 200C/400F/Gas 6.
  • For the crumble topping, place the plain flour into a bowl with the butter and rub together with your fingers until the mixture resembles breadcrumbs. Stir in the crumbled amaretti biscuits and chocolate pieces.
  • For the filling, place the cherries and brandy into a saucepan and heat gently for 4-5 minutes.
  • Transfer the filling mixture to an ovenproof dish and spoon over the crumble topping. Transfer to the oven and bake for 8-10 minutes, until golden-brown.
  • To serve, place the crumble into bowls with a scoop of ice cream.
